做法:洗净(jìng )宰好鲫(jì )鱼,洗净淮(huái )山和(hé )薏米。用(yòng )清水把陈皮泡软(ruǎn ),拍裂一小块(kuài )姜(jiāng ),热锅,用姜(jiāng )块(kuài )在(zài )锅(guō )上擦(cā )一遍,放两勺油,待(dài )油六成热下(xià )鱼,煎至微黄(huáng )。煮(zhǔ )沸瓦(wǎ )煲里的清水,放入煎煮(zhǔ )好的鲫鱼和其他材(cái )料,武(wǔ )火煮沸(fèi ),转中(zhōng )小火(huǒ )煲一个半小时(shí ),下盐调味即(jí )可(kě )品(pǐn )尝。
