做法:洗净宰(zǎi )好鲫(jì )鱼,洗净淮山和(hé )薏米。用清(qīng )水把陈(chén )皮(pí )泡软,拍裂一(yī )小(xiǎo )块姜(jiāng ),热锅,用(yòng )姜块在锅(guō )上擦一遍,放(fàng )两(liǎng )勺(sháo )油,待油六(liù )成(chéng )热下鱼,煎至微(wēi )黄(huáng )。煮(zhǔ )沸瓦煲里(lǐ )的清(qīng )水,放(fàng )入煎煮好的(de )鲫鱼(yú )和其他材料,武火煮沸(fèi ),转中小火煲一个半(bàn )小时,下盐(yán )调(diào )味即可品尝。
