做法:洗净宰(zǎi )好(hǎo )鲫鱼,洗净(jìng )淮山和薏米。用(yòng )清(qīng )水把陈皮(pí )泡软,拍裂一小块(kuài )姜,热锅(guō ),用(yòng )姜块在锅上(shàng )擦(cā )一遍,放两勺油(yóu ),待油(yóu )六成热下鱼,煎(jiān )至微黄。煮沸瓦(wǎ )煲里(lǐ )的清水,放入煎煮好的鲫鱼(yú )和(hé )其他材料,武(wǔ )火煮沸,转中(zhōng )小(xiǎo )火煲一(yī )个(gè )半小时,下盐(yán )调(diào )味(wèi )即(jí )可(kě )品尝。
