做法(fǎ ):洗净(jìng )宰好(hǎo )鲫鱼,洗净(jìng )淮(huái )山(shān )和薏米。用清水(shuǐ )把陈皮(pí )泡软,拍裂一小块姜,热锅(guō ),用姜(jiāng )块(kuài )在锅上擦(cā )一遍,放(fàng )两勺(sháo )油(yóu ),待油六成热下鱼,煎至(zhì )微(wēi )黄(huáng )。煮沸瓦煲里的(de )清水,放入(rù )煎煮好(hǎo )的(de )鲫鱼(yú )和其(qí )他(tā )材料,武火(huǒ )煮沸,转中(zhōng )小火煲一个半小时(shí ),下盐(yán )调味(wèi )即可(kě )品尝。
