做法:洗净(jìng )宰好鲫(jì )鱼,洗净淮山和(hé )薏米。用清水把(bǎ )陈皮泡软,拍裂一小块姜(jiāng ),热锅,用姜块(kuài )在锅(guō )上(shàng )擦(cā )一遍(biàn ),放(fàng )两(liǎng )勺油,待油(yóu )六成热(rè )下鱼,煎至微黄。煮(zhǔ )沸瓦煲(bāo )里的清(qīng )水,放入煎煮(zhǔ )好(hǎo )的鲫(jì )鱼和其他(tā )材(cái )料,武火(huǒ )煮沸,转中小火(huǒ )煲一(yī )个半小时,下盐(yán )调(diào )味(wèi )即可品尝。
