做法:洗(xǐ )净宰好(hǎo )鲫鱼(yú ),洗净(jìng )淮(huái )山和薏米(mǐ )。用(yòng )清水把陈皮泡(pào )软,拍裂(liè )一小块姜,热锅,用姜(jiāng )块在锅(guō )上擦一遍(biàn ),放两勺(sháo )油,待(dài )油六成热(rè )下鱼(yú ),煎至(zhì )微黄。煮沸瓦(wǎ )煲里的清(qīng )水(shuǐ ),放(fàng )入(rù )煎煮好的(de )鲫鱼和其他材料,武火煮沸,转中小(xiǎo )火煲(bāo )一个(gè )半(bàn )小(xiǎo )时,下盐调味即可(kě )品尝。
