做法:洗(xǐ )净宰(zǎi )好鲫鱼,洗(xǐ )净(jìng )淮山和薏米(mǐ )。用清水把陈皮泡(pào )软(ruǎn ),拍(pāi )裂(liè )一(yī )小(xiǎo )块(kuài )姜(jiāng ),热(rè )锅,用姜块(kuài )在锅(guō )上擦一遍,放两勺油,待油六成热(rè )下鱼,煎至微黄(huáng )。煮沸(fèi )瓦煲(bāo )里的清水,放(fàng )入(rù )煎煮(zhǔ )好(hǎo )的鲫(jì )鱼和其他材料,武火煮(zhǔ )沸,转中小火煲一个(gè )半小(xiǎo )时,下盐调味(wèi )即可品尝。
