做(zuò )法:洗净宰好鲫(jì )鱼,洗净淮山(shān )和薏(yì )米。用清(qīng )水把陈皮泡(pào )软,拍裂(liè )一(yī )小块姜,热(rè )锅,用姜(jiāng )块(kuài )在(zài )锅(guō )上(shàng )擦一遍,放(fàng )两勺油,待油六成(chéng )热下鱼,煎(jiān )至(zhì )微黄。煮沸瓦煲里的清(qīng )水(shuǐ ),放(fàng )入煎煮(zhǔ )好的鲫(jì )鱼和其他材料,武火煮沸,转中小(xiǎo )火煲一(yī )个(gè )半小时,下盐调(diào )味(wèi )即可(kě )品尝(cháng )。
