做法:洗(xǐ )净(jìng )宰好鲫鱼(yú ),洗净淮山和薏(yì )米。用清水把(bǎ )陈皮泡(pào )软,拍(pāi )裂(liè )一(yī )小(xiǎo )块姜,热锅,用姜块在锅上(shàng )擦(cā )一遍(biàn ),放两(liǎng )勺油(yóu ),待油(yóu )六成热(rè )下鱼(yú ),煎(jiān )至微黄。煮沸瓦(wǎ )煲里的清(qīng )水,放入(rù )煎煮好的鲫鱼(yú )和(hé )其他材料,武火煮沸(fèi ),转中小火(huǒ )煲一个半小(xiǎo )时,下盐调味即(jí )可品尝(cháng )。
