做法:洗净宰好鲫鱼(yú ),洗净(jìng )淮(huái )山和薏米(mǐ )。用清水把陈(chén )皮泡软,拍(pāi )裂一小块姜,热(rè )锅,用(yòng )姜(jiāng )块在锅上(shàng )擦一(yī )遍,放两勺油,待油六成(chéng )热(rè )下鱼(yú ),煎至微黄。煮沸瓦煲里(lǐ )的清(qīng )水,放入煎(jiān )煮好的(de )鲫鱼和其他(tā )材(cái )料,武火煮(zhǔ )沸(fèi ),转中(zhōng )小火(huǒ )煲(bāo )一个(gè )半小时,下(xià )盐调味即(jí )可品尝(cháng )。
