做(zuò )法(fǎ ):洗净宰(zǎi )好鲫鱼,洗净(jìng )淮(huái )山(shān )和薏米。用(yòng )清水把陈皮泡软,拍(pāi )裂一小块姜,热锅,用姜块(kuài )在(zài )锅(guō )上(shàng )擦(cā )一遍,放(fàng )两(liǎng )勺油,待油六成热下鱼,煎至微黄(huáng )。煮(zhǔ )沸瓦煲(bāo )里(lǐ )的(de )清水,放入(rù )煎煮好(hǎo )的鲫鱼和(hé )其他材(cái )料,武(wǔ )火煮沸,转中小(xiǎo )火煲一(yī )个半小时,下盐调(diào )味即(jí )可(kě )品尝。
