做法:洗净宰好鲫鱼,洗净淮(huái )山(shān )和(hé )薏米。用清(qīng )水(shuǐ )把陈(chén )皮泡(pào )软,拍裂一(yī )小块姜(jiāng ),热锅(guō ),用姜(jiāng )块在(zài )锅上擦一遍,放(fàng )两勺(sháo )油,待油六成热(rè )下鱼,煎至微黄(huáng )。煮沸瓦煲里的清水(shuǐ ),放入(rù )煎煮好的鲫鱼和其他材料,武(wǔ )火煮(zhǔ )沸,转中(zhōng )小火煲(bāo )一个(gè )半(bàn )小(xiǎo )时(shí ),下盐(yán )调味(wèi )即可品尝。
