做法:洗(xǐ )净宰好鲫(jì )鱼,洗(xǐ )净(jìng )淮山和(hé )薏(yì )米。用清水把(bǎ )陈皮泡(pào )软,拍(pāi )裂一(yī )小(xiǎo )块姜,热(rè )锅(guō ),用(yòng )姜块在锅上(shàng )擦一遍,放(fàng )两勺油,待油(yóu )六成热(rè )下(xià )鱼(yú ),煎至微黄。煮沸瓦煲里的(de )清(qīng )水,放(fàng )入(rù )煎煮好的(de )鲫鱼和其(qí )他(tā )材料,武火(huǒ )煮沸,转中小(xiǎo )火(huǒ )煲一个半小时,下盐调味即可品(pǐn )尝。
