做法:洗(xǐ )净宰(zǎi )好鲫鱼,洗(xǐ )净淮(huái )山和薏米。用(yòng )清水把陈(chén )皮泡软,拍(pāi )裂(liè )一(yī )小块姜(jiāng ),热锅,用姜块在(zài )锅上擦一遍,放两勺油,待油(yóu )六成热下(xià )鱼(yú ),煎至微(wēi )黄。煮沸瓦(wǎ )煲里的清水,放入煎煮好(hǎo )的鲫(jì )鱼(yú )和其他材(cái )料,武(wǔ )火煮(zhǔ )沸,转中小火(huǒ )煲(bāo )一个半(bàn )小时(shí ),下(xià )盐(yán )调味即(jí )可品尝。
