做(zuò )法(fǎ ):洗(xǐ )净宰(zǎi )好鲫鱼,洗净淮山和薏(yì )米。用清(qīng )水(shuǐ )把陈皮泡软,拍裂(liè )一小块姜(jiāng ),热(rè )锅,用(yòng )姜(jiāng )块在(zài )锅上擦一遍,放两(liǎng )勺(sháo )油,待(dài )油(yóu )六(liù )成热下(xià )鱼,煎至微黄(huáng )。煮沸瓦(wǎ )煲里(lǐ )的(de )清水,放入煎煮好的鲫鱼(yú )和其(qí )他材料(liào ),武火煮(zhǔ )沸,转中小火(huǒ )煲(bāo )一个半小时,下盐(yán )调味即可品尝(cháng )。
