做法(fǎ ):洗净宰好鲫鱼,洗净淮(huái )山和薏米。用(yòng )清水(shuǐ )把(bǎ )陈皮泡软(ruǎn ),拍裂一(yī )小(xiǎo )块(kuài )姜(jiāng ),热锅,用姜块在(zài )锅上擦一遍,放两(liǎng )勺油(yóu ),待油六成(chéng )热(rè )下鱼(yú ),煎至微黄(huáng )。煮(zhǔ )沸(fèi )瓦煲里(lǐ )的(de )清水,放(fàng )入煎煮好的鲫(jì )鱼和(hé )其他材料,武(wǔ )火煮沸(fèi ),转(zhuǎn )中小火煲(bāo )一个半小(xiǎo )时(shí ),下盐调味即(jí )可品尝。
