做法:春笋(sǔn )切(qiē )成片后加少(shǎo )许盐捞出后用清(qīng )水(shuǐ )浸泡(pào ),生姜切(qiē )片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺油(yóu ),放入生姜、春笋(sǔn )、牛肉片、葱段翻(fān )炒1分(fèn )钟左(zuǒ )右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入(rù )少量清(qīng )水半(bàn )掩住(zhù )春笋,盖上锅盖大(dà )火煮开后(hòu )转中(zhōng )火。煮到水快熬干(gàn )的(de )时候加入盐,翻(fān )炒均匀稍收(shōu )汁(zhī )时(shí )盖(gài )上(shàng )锅(guō )盖焖。
