做法:洗净宰(zǎi )好鲫鱼,洗净淮山(shān )和薏(yì )米。用清水把陈(chén )皮泡软(ruǎn ),拍(pāi )裂一(yī )小块姜,热(rè )锅,用姜(jiāng )块在(zài )锅上(shàng )擦一遍(biàn ),放(fàng )两勺油,待油六(liù )成热下(xià )鱼,煎至(zhì )微黄。煮沸瓦(wǎ )煲里的清(qīng )水(shuǐ ),放入(rù )煎煮好的鲫鱼和其他材料(liào ),武火煮(zhǔ )沸,转(zhuǎn )中小(xiǎo )火煲一个半小(xiǎo )时(shí ),下盐调(diào )味即(jí )可品尝。
