做(zuò )法(fǎ ):洗净宰好鲫鱼,洗净淮(huái )山(shān )和薏米。用(yòng )清水把陈皮泡(pào )软,拍裂一小块姜,热(rè )锅,用姜块(kuài )在(zài )锅上擦一遍(biàn ),放两勺油(yóu ),待油六成(chéng )热下鱼(yú ),煎至(zhì )微黄。煮(zhǔ )沸瓦煲里(lǐ )的清(qīng )水,放入煎(jiān )煮(zhǔ )好(hǎo )的鲫鱼(yú )和其他(tā )材料(liào ),武火煮沸,转中(zhōng )小(xiǎo )火煲一(yī )个半(bàn )小时(shí ),下(xià )盐调味即可品尝(cháng )。
