做(zuò )法:春笋(sǔn )切(qiē )成片后加(jiā )少许盐捞出(chū )后(hòu )用清水(shuǐ )浸泡,生姜(jiāng )切片,葱切成段。锅(guō )烧热(rè ),倒入2勺油,放(fàng )入生姜、春笋(sǔn )、牛(niú )肉片、葱段翻炒1分钟左(zuǒ )右。再加(jiā )入(rù )生抽(chōu )、老抽、蚝油(yóu )翻炒均匀,加入少(shǎo )量(liàng )清水(shuǐ )半(bàn )掩住(zhù )春笋,盖上(shàng )锅盖大(dà )火(huǒ )煮开(kāi )后转中火。煮到水快熬干的(de )时候加入盐,翻(fān )炒均匀稍收汁时盖(gài )上(shàng )锅盖(gài )焖。
