做法:洗(xǐ )净宰好鲫(jì )鱼(yú ),洗净淮(huái )山(shān )和薏米。用(yòng )清水(shuǐ )把(bǎ )陈(chén )皮泡(pào )软,拍裂(liè )一小块姜,热锅,用姜块在锅(guō )上擦一遍,放(fàng )两勺油,待油六成(chéng )热(rè )下(xià )鱼,煎(jiān )至微黄。煮沸瓦煲(bāo )里的清(qīng )水(shuǐ ),放入(rù )煎煮(zhǔ )好(hǎo )的(de )鲫鱼和其他材料,武火(huǒ )煮(zhǔ )沸,转中小火煲一(yī )个(gè )半小(xiǎo )时,下盐调(diào )味即可品尝(cháng )。
