做(zuò )法:洗净宰好鲫鱼(yú ),洗净(jìng )淮山(shān )和薏米(mǐ )。用清(qīng )水把(bǎ )陈(chén )皮泡软,拍裂一小块姜,热锅(guō ),用姜块在(zài )锅(guō )上(shàng )擦一遍(biàn ),放(fàng )两勺油,待(dài )油六成热下鱼,煎至微(wēi )黄(huáng )。煮(zhǔ )沸瓦煲(bāo )里(lǐ )的清(qīng )水,放入煎煮(zhǔ )好的鲫鱼和其(qí )他材(cái )料,武火(huǒ )煮沸,转中小(xiǎo )火(huǒ )煲一个(gè )半小时(shí ),下盐(yán )调味即可品尝(cháng )。
