做法:洗净宰好(hǎo )鲫鱼,洗净淮山和薏米。用清水把陈皮泡软(ruǎn ),拍裂一小块姜(jiāng ),热(rè )锅(guō ),用姜块在(zài )锅(guō )上(shàng )擦(cā )一遍(biàn ),放两(liǎng )勺(sháo )油,待(dài )油六成热(rè )下(xià )鱼,煎至微黄。煮沸瓦(wǎ )煲里的(de )清水,放(fàng )入(rù )煎(jiān )煮好的鲫鱼和(hé )其他(tā )材料(liào ),武火煮沸,转中(zhōng )小火(huǒ )煲一(yī )个(gè )半小时,下盐(yán )调味即可品尝。
