做(zuò )法:洗(xǐ )净宰(zǎi )好鲫鱼(yú ),洗净淮山和薏(yì )米。用清水把陈(chén )皮(pí )泡软,拍裂一小块(kuài )姜(jiāng ),热锅,用(yòng )姜(jiāng )块在锅上擦(cā )一(yī )遍,放两勺(sháo )油,待(dài )油(yóu )六(liù )成热(rè )下鱼,煎至(zhì )微黄。煮沸(fèi )瓦煲里的清水(shuǐ ),放入煎煮好的鲫鱼(yú )和其他材(cái )料,武火(huǒ )煮沸,转(zhuǎn )中(zhōng )小(xiǎo )火煲(bāo )一(yī )个半小时,下盐调味(wèi )即(jí )可品尝。
