做(zuò )法:洗净宰好鲫鱼,洗净淮(huái )山和薏米。用(yòng )清水把陈皮泡软(ruǎn ),拍(pāi )裂一小(xiǎo )块姜(jiāng ),热锅(guō ),用姜块在(zài )锅上擦一遍(biàn ),放两勺(sháo )油,待油(yóu )六成热(rè )下(xià )鱼,煎至(zhì )微黄。煮(zhǔ )沸瓦煲里的清水,放(fàng )入(rù )煎(jiān )煮好的鲫鱼和其他材料,武火(huǒ )煮(zhǔ )沸,转(zhuǎn )中小(xiǎo )火(huǒ )煲(bāo )一个(gè )半小时,下盐调味(wèi )即可(kě )品(pǐn )尝。
